Perfect Cracker Barrel Buttermilk Pancakes

I just realized I haven't posted in a week. Sorry about that! My quest for the perfect pancake has finally ended. These are so fluffy and tasty; they are quite perfect! I've been making them for a few weeks now and I never fail to make them perfect every time. If you want a perfect pancake, look no farther! I have had success using half all purpose and half whole wheat flour as well. Mmmm, I wish I had some right now!!


Perfect Cracker Barrel Buttermilk Pancakes

Ingredients:
2 cups sifted all-purpose flour (half whole wheat turns out well too!)
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon sugar
2 eggs
2 cups buttermilk (make your own here)
oil or butter (for cooking)
maple syrup, for serving

Directions: 
In a large bowl, combine all ingredients together until incorporated, but do not over mix. Heat a griddle or non-stick pan on med to med-high heat, and grease with butter or oil (more if you like a crispy edge). 

Drop batter using a 1/4 cup measuring cup onto hot pan. Once the bottom side is golden and there are bubbles throughout the pancake, flip and brown remaining side. 

Serve with butter and real maple syrup.

  2. I can't believe you haven't made pancakes!! My kids love them. These puff up so well too. You can add in anything you want to. Definitely a staple in our house!
