Finally, a new recipe! These are easy and delicious! I took them to a recent cooking club. They are flourless, so that makes them gluten free! Yum!
Flourless Chocolate Peanut Butter Cookies

Ingredients:
1 cup peanut butter
2 Tablespoons unsweetened cocoa powder (You could also just use bought chocolate peanut butter.)
2/3 cup sugar
1 large egg, whisked
2 teaspoons vanilla extract
1/3 cup dark chocolate chips (I used semisweet.)
1/4 teaspoon salt
Directions:
Preheat your oven to 350.
In a mixing bowl mix together the peanut butter until chocolate is well incorporated. Add in the sugar, egg, and vanilla until mixed well. After mixed well, add in chocolate chips. The batter should form a thick dough. Roll into small balls and place on a cookie sheet lined with parchment paper or a silpat.
Gently press down with a fork, twice, to make a crisscross pattern.
Bake for 10-14 minutes rotating the pan once, half-way through. Let fully cool before handling. They will firm up as the cool.
