Have you tried those icing creation packets that you can mix into the tubs of premade icing? Well, I tried one at a party I was at and I couldn't stop craving the orange icing that were atop those white cupcakes! Oh what a great flavor combination! I typically only used boxed cake and icing mixes when I'm in a bind, so I wanted to recreate it at home.
When Reynolds sent me some of their StayBrite® Baking Cups to try out, I knew it was the perfect time to try my recipe. These baking cups are different from most, because they don't fade when you bake them. They have a lot of different designs to choose from. I got to review some with monkeys on them, and they were so cute! I also received a really neat book called Cupcakes, Cookies, and Pie, Oh, My! by Karen Tack and Alan Richardson. It has all sorts of ideas to make your food more fun! My kids loved it and have asked me to make numerous things out of it already.

Now on to the recipe for the orange icing. It isn't hard at all and it tastes so good! I used my favorite white cake recipe and my favorite buttercream icing recipe, but spiced up the icing. If you like orange, I think you'll like this too!
White Cupcakes with Orange Flavored Frosting
*recipe makes approximately 24 cupcakes
Ingredients:
cupcakes
1 cup butter, softened
2 cups sugar
3 cups cake flour
2 egg
1 cup buttermilk
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla extract
1 cup hot water
icing
1 cup unsalted butter (2 sticks), softened
3-4 cups powdered sugar, SIFTED
1/4 teaspoon table salt
1 tablespoon orange extract
2-4 tablespoons milk or heavy cream
Directions:
To make cupcakes:
Preheat oven to 350 degrees and line cupcake pan with cupcake liners.
In a large mixing bowl, cream together butter and sugar. Once butter and sugar are mixed well, add in egg. Then add remaining ingredients individually, mixing well after each addition until smooth. Scoop batter into lined cupcake pan.
Bake for 20-25 minutes. Cool completely and then frost with vanilla buttercream frosting (recipe below).
To make the icing:
In a mixing bowl, beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed until the sugar has been incorporated with the butter. Increase mixer speed to medium and add orange extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.

Tough to pick, but I will go with yellow cake and chocolate icing (although I do love red velvet and cream cheese icing too).
