This recipe is so easy and so delicious! It only uses one pot, score one for the clean up crew! There is a dish at my local Mexican joint that is almost similar to this. Next time I make it, I'm going to try it with some white Mexican cheese. I love that stuff! This was so, so good! Top it with some sour cream, maybe even some guacamole, and you'll definitely be having seconds!
Mexican Chicken and Tortillas

Ingredients:
1 pound boneless chicken breasts, cut into chunks
olive oil, for cooking
1 teaspoon Seasoning for Tacos
Salt, to taste
1/2 cup enchilada sauce
4 ounces cheddar cheese, shredded
3 green onions, chopped
sour cream for topping
tortillas
Directions:
Cut chicken in to chunks and sprinkle the chicken on both sides with taco seasoning. Heat oil in large skillet and cook chicken until no pink and cooked through. After chicken is cooked, add the enchilada sauce and toss to coat the chicken. Sprinkle the cheese over the chicken and heat until warmed and melted. Scatter the green onions over the top. Serve over warm tortillas.

When do you cook the chicken? After the taco seasoning, after the enchilada sauce, or after the cheese?
Woops, thanks Mitzi! I totally forgot to put how to cook the chicken! Sorry! I have fixed it. You cook the chicken first, then add the other ingredients. =)
