This was so good! I grilled some teriyaki chicken last night and I was going to bake some brown rice to go with it, but my husband requested quinoa! Score! If you know me at all, that meant I needed to try out a new recipe with the quinoa. I came up with this stir-fry with veggies as our side. It was so good!! I can't wait to eat it again. This would go great with anything and it's easy. I used frozen vegetables, because I always have those on hand. You could easily use fresh vegetables. I also used grapeseed oil, but you could really use olive oil or any other oil you prefer. You need to try this. It was delish!
Quinoa Vegetable Stir-Fry
Ingredients:
1/2 cup uncooked quinoa
1 cup chicken stock/broth
8 ounces broccoli florets, frozen
1 cup peas and carrots mix, frozen (or half of each)
1/4-1/2 cup onion, diced
Kosher Salt, to taste
Fresh cracked pepper, to taste
2 tablespoons garlic, minced
1-2 tablespoons grapeseed oil (or olive oil)
Directions:
In small saucepan, combine quinoa and chicken broth/stock. Bring to a boil. Once boiling, cover and reduce heat and simmer 15 minutes until all liquid is absorbed. You will know that the quinoa is done when all the grains have turned from white to transparent, and you see a white spiral in the center of the grain.
Meanwhile, in a large skillet heat oil and cook garlic, broccoli, peas, carrots, and onions until vegetables are tender. Add in cooked quinoa and season with salt and pepper.
