Hamburger Beef Soup

This was so delicious and simple. It's almost identical to my vegetable beef soup, but stew meat is so expensive, so I wanted to find something that might be a bit more cost friendly but have a great flavor too. I've always got hamburger meat in the freezer, so that's what I went with. My husband raved about this, so I think he may like it even better with hamburger meat instead of stew meat. I love the addition of beans in this soup too because they are so filling and not expensive either. This could easily be made in the crock pot. Just brown the meat and onion and put all ingredients in a crock pot on low for a few hours. Easy peasy!





Hamburger Beef Soup


Ingredients:
1 pound hamburger meat
1 medium onion, chopped (1/2 cup)
32 ounces beef broth/stock
1-2 cups chicken broth/stock
2 teaspoons dried thyme leaves
1/2 teaspoon pepper
2 bay leaves
1-2 cans navy beans or other white bean, rinsed and drained
4 medium carrots, cut into bite size pieces
2 medium celery stalks, cut into bite size pieces

Directions:
Cook beef and onion together until beef is brown.

Stir in both broths, thyme, pepper, and bay leaf. Heat to boiling; reduce heat. Cover and simmer about 30-45 minutes, stirring occasionally.

Stir in beans, carrots and celery. Cover and simmer about 30 more minutes, stirring occasionally, until vegetables are tender. Remove bay leaves before serving.
