It's almost National Pi(e) day! I made this a few weeks ago, but I wanted to save it for this special day. Tomorrow is National Pi(e) Day! Do you remember having a contest in school to see who could memorize Pi to the farthest place value? Oh you don't? Never mind, then. Back to the pie. This was so good!! I added peaches, because I didn't have quite 5 cups of blueberries and I loved the combo, but I just know that an all blueberry pie would ah-mazing! This is easy peasy and I know you're gonna love it. Happy almost Pi(e) day!
Blueberry Peach Pie
*I used frozen fruit, you could use fresh fruit. You could also do all blueberry or all peach, just omit the other fruit and make sure to use 5 cups total.
Ingredients:
1 single pie crust
1/2 cup sugar
1/2 cup water
3 Tbsp. cornstarch
3 cups blueberries (I used frozen.)
2 cups peaches (I used frozen.)
4 ounces of cream cheese, softened
Directions:
Cook pie crust according to directions. set aside to cool.
Combine sugar, water, cornstarch, and fruit. Cook on medium heat until mixture starts to bubble, then reduce to a medium-low simmer and stir frequently until thickened, about 5-10 minutes. Remove from heat.
Spread cream cheese on the bottom of the cooked pie crust. Pour blueberry and peach filling over cream cheese. Cool for a few hours in the refrigerator.
