A couple of weeks ago we were invited to dinner at a friend's house. I was asked to bring a potato dish. In normal fashion, I decided to make something new. I love twice baked potatoes, but wanted something easier, so I decided to make it into a casserole. This was so delicious. I didn't have any bacon, but you could add some in with the cheese mixture or sprinkle it on top. This is pretty easy to make and will definitely please your family and friends.
Twice Baked Potato Casserole

Ingredients:
1 1/2 pounds red potatoes, baked*
1 1/2 cups cheddar cheese, divided
1 cup mozzarella cheese
2 green onions, chopped
salt and pepper to taste
1 1/2 cups sour cream
*How I bake my red potatoes: Scrub clean and dry. Massage olive oil on skins of potatoes place on baking sheet and sprinkle with kosher salt. Bake in preheated 450 degree oven for 30 minutes, or until fork can be inserted easily. I also flip my potatoes half way through baking.
Directions:
In a large bowl, mix 1 cup of the cheddar cheese, 1 cup mozzarella cheese, green onions, sour cream, and salt and pepper to taste. Cut baked potatoes into chunks and toss into bowl. Mix until all potatoes are covered. Place in greased baking dish and sprinkle with remaining 1/2 cup of cheddar cheese. Bake at 400 for 15 minutes until all ingredients are warmed and cheese is melted on top.
