Yummy is all I can really say about cake. My friend Stephanie had us over a week or so ago for dinner and she made this cake for dessert. It is so delicious. It reminds me a lot of PW's Chocolate Sheet Cake, but different also. The icing is very similar if not the same. This is so good. I promise it will be a hit with whoever you serve it to. It is really rich, so I recommend serving it with vanilla ice cream or whipped cream. Thanks for sharing Stephanie! (I don't have the original source for the recipe, so I just gave her the credit.)
Chocolate Coca Cola Cake

Ingredients:
2 Cups flour
2 Cups White Sugar
1/2 tsp salt
1 tsp Baking powder
1/2 tsp Cinnamon
1 Cup Butter
1/4 Cup cocoa powder, unsweetened
1 Cup coca-cola
1/2 Cup buttermilk
2 eggs
1 tsp Vanilla Extract
1/2 Cup Butter
1/4 Cup cocoa powder, unsweetened
1/2 Cup coca-cola
4 Cups confectioner's sugar
1 Cup Pecans, chopped
Directions:
In a large bowl mix flour, sugar, salt, baking powder and cinnamon.
In a saucepan over medium high heat combine 1 cup butter, 1/4 cup unsweetened cocoa powder, 1 cup coca-cola, and 1/2 cup buttermilk. Stir mixture well until it boils. Once it is boiling, take off heat and add liquid mixture to flour mixture and whisk until combined. Next, add 2 eggs and 1 tsp vanilla extract and mix.
Put in 9x13 greased pan and bake for 30 minutes at 350F.
When cake is nearly done, make glaze by mixing 1/2 cup butter, 1/4 cup unsweetened cocoa powder and 1/2 cup coca-cola in a saucepan.
Once it boils, remove from heat and slowly stir in 4 cups of confectioner's sugar until nice and smooth. Then add 1 cup chopped pecans and stir.
Once cake is done and out of oven, pour this warm glaze right over the top of the hot cake. Let cool for a few minutes and eat. Serve with vanilla ice cream or whipped cream if you like.
