Cinco de Mayo Recipes

Do you do anything to celebrate Cinco de Mayo? Well, sometimes we do, and sometimes we don't. I love going out and hearing a live band and eating some yummy Mexican food, but I also like creating our own celebration at home. I don't have a ton of Mexican dishes on my blog, but I have enough to do a post about this! We are going to celebrate tonight since my husband won't be home tomorrow night for dinner. I'm thinking about making the Shrimp Po Boy Tacos, guacamole with pico (guacamole will be different from the one below), and easy sopapillas. What are you making?
