Peanut Butter Cookies
slightly adapted from Siggy Spice
Ingredients:
1 cup peanut butter (smooth or crunchy)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
Directions:
Preheat oven to 350 degrees.
Combine all ingredients until incorporated. Drop by tablespoonful or cookie scoop onto a cookie sheet.
Use a fork to flatten a little bit, criss crossing the fork.
Bake for 8-10 minutes. They may not seem done, but they are. Let cool about 5 minutes, then place on cooling rack.

I was absolutely giddy when I saw the word gluten free on your blog this morning. I made these a while back too! However, I doubled the recipe, but forgot to double everything besides the PB. They were actually pretty decent, but stayed pretty flat. I'm looking forward to trying them again. Thanks again for adding gluten free to the blog post! : )
I totally think these taste like the inside of a Reeses! I am going to try them with the Honey Roasted Peanut Butter and see how they turn out!

Hey! I am so glad that I found your blog. I don't cook that often, but trying to get back into it. I love to bake but something about cooking cooking makes me nervous. Your posts make it seem so easy. I made these yesterday with my two year old little girl. They were so good!!
