These two sauces are great additions to tacos or sandwiches. I made the mayo to go with Shrimp Po-Boy Tacos (recipe coming tomorrow!), and it was a perfect complement! I also use the remoulade sauce on my shrimp po-boy sandwiches. I bet the jalapeno lime mayo would go great on that sandwich too! Below are both of the recipes.
Jalapeno Lime Mayonnaise Recipe
slightly adapted from Food Network
Ingredients:
1/2 cup plus 2 tablespoons mayonnaise
1/2-1 jalapeno pepper, stemmed, seeds removed and finely chopped
1 teaspoon lime juice
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon dried crushed oregano
Directions:
Place all of the ingredients in a small bowl and whisk to blend. Transfer to a clean container and refrigerate until ready to use or serve.
Remoulade Sauce
Ingredients:
½ cup plus 2 tbsp. light mayonnaise
2 tbsp. stone ground mustard
1 clove garlic, minced
1½ tbsp. pickle juice
½ tsp. prepared horseradish
¼ tsp. cayenne pepper
¼ tsp. hot paprika (or regular)
Dash of hot sauce
Directions:
Combine all of the sauce ingredients in a blender or food processor and process until smooth. (If you don’t have a blender or food processor, you can just mix it in a small bowl with a spoon.) Adjust seasonings to taste. Chill until ready to use.
