If you've been following my blog for any amount of time, you probably already realize that I like to make muffins. My boys love them and so do I! So I'm always trying out new recipes. A week or so ago, we decided to put a twist on the traditional blueberry muffin, we made banana blueberry muffins. They were delish! Easy to make and yummy to eat. Blueberry Banana Muffins
slightly adapted from Warm Vanilla Sugar
Makes 12 muffins
Ingredients:
1 1/2 cups whole white wheat flour (or all purpose)
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 large egg
1 1/2 cups mashed banana (3 or 4 large bananas)
1/2 cup unsalted butter, melted and cooled slightly
3/4 cup blueberries
Directions:
Preheat oven to 375 degrees F.
Line a 12-cup muffin pan with baking cups (I spray my paper cups with nonstick spray so the paper will come off easier when eating.)
Combine flour, sugar, baking powder, baking soda, and salt in a small bowl. Combine the egg, mashed banana, and melted butter in a large bowl and stir until thoroughly blended. Add the flour mixture to the banana mixture and stir until just moist. Gently fold in the blueberries. If you don’t want blue muffins, use fresh blueberries, or coat frozen blueberries with flour before adding them to your muffin batter. Divide batter evenly among 12 muffin cups, filling each 2/3 full. I also added a couple of frozen blueberries to the tops of each muffin before baking them.
Bake for 20 to 25 minutes, or until the tops of the muffins spring back when lightly touched and a toothpick comes out clean when inserted into the center of one muffin.
Remove muffins from pan immediately and place on a wire rack to cool.

My family loves banana blueberry muffins! I have a few muffin recipes for you. I will link up banana apple cupcake muffins, and within my blog post, you will find a few of my other favorites. I make muffins alot too!
I love bluberry muffins, but I've never tried them with the addition of banana. I bet it would be a great ingredient to throw in!
