Hashbrown Casserole

One of my all time favorite side dishes during the holidays is hashbrown casserole. Have you ever had it? It is so good! It is not healthy by any means, but oh, it is so worth it! This is a great dish to take to pot lucks, serve at brunch, or with a big ham or turkey. Or, you could just eat it by itself like I do. You think I kid, but I do not. Please don't tell anyone!

Hashbrown Casserole
from my friend Jennie

Ingredients:
1 bag frozen shredded hashbrowns,thawed
2 cups cheddar cheese, shredded
6 TBSP Butter, melted
2 cups sour cream
1/2 cup onion, diced
1 tsp salt
1/4 tsp pepper
1 can cream of mushroom soup (Substitute for cream soups found here.)
1 can cream of chicken soup
1/4 cup bread crumbs

Directions:

Preheat oven to 350 degrees Fahrenheit. Defrost hashbrowns and combine them with cheese and 4 TBSP melted butter. Add remaining ingredients and mix well. Pour into greased casserole dish, 9x13 works great. Sprinkle bread crumbs on top and drizzle remaining melted butter on top. Heat in oven for 20-30 minutes until bubbly.
