My MOPS group had a Tea and Testimony for our meeting this month and I was to bring cucumber sandwiches. I hadn't ever made cucumber sandwiches before, and I had only eaten them a handful to times. But I did remember at one of my bridal showers having my first cucumber sandwich and thinking it was delicious! How had I missed out on these yummy little sandwiches all my life? I called my mom and got her to get the recipe from my hostess of that particular shower. Below is that recipe. The secret ingredient is dill weed. You just sprinkle a little bit on top of the cucumber and it adds to the flavor and makes it so yummy! Just in time for bridal/baby showers!
Cucumber Sandwiches

Ingredients:
1 package dry Italian dressing mix
1 8 oz block of cream cheese
1 TBSP mayonnaise
slices of bread (I use white.)
1-2 cucumbers, peeled and sliced
dill weed
Directions:
Mix Italian dressing mix with cream cheese very well. Add 1 TBSP mayonnaise to help the mixture be easier to spread. Use a small circle cookie cutter to cut the bread. I use white bread, but wheat would probably be tasty as well. You should be able to get about 3 circle rounds of bread per slice. Once you have your bread cut, spread your cream cheese mixture on top of half of the circle pieces of bread. Place a thick slice of cucumber on top the cream cheese mixture and then sprinkle dill weed on top of the cucumber and top with second piece of bread. The dill weed is what makes these so good! The flavor is best if you let these sit over night in the fridge, but are still pretty good if you don't have that time.
