So I went to eat at Mudpie a couple of months ago for the first time and I got a grilled cheese. Now this is no ordinary grilled cheese, and it isn't even grilled. I decided that I could make this at home so I bought the ingredients and made it for the first time last week. It was delicious! So here is the "recipe" below.
2 pieces of bread (Mudpie uses texas toast, I used regular white wheat)
2 slices Cheddar Cheese
2 slices Monterey Colby Jack (It calls for cheddar Jack if you can actually find that)
Feta cheese
Preheat oven to 450 degrees. Place bread slices on baking sheet, layer the slices of cheese on both pieces of bread. (cheddar and jack on both sides) Sprinkle feta cheese on one slice. Bake until the cheese is bubbling and the bread is toasted. Smoosh both pieces of bread together and enjoy!

I just made this for lunch & it's awesome! I only used 1 slice of each of the cheeses for personal preference & to be more WW-friendly. I love it!
