I got this already made from the Junior League when I had my oldest son. It came from one of the JL cookbooks and is so yummy! I made a few changes to it that I think made it even better! Enjoy!

Spinach and Canadian Bacon Lasagna
from The Junior League
Ingredients:
9 uncooked lasagna noodles
2 cups (8oz) shredded mozzarella cheese (I used 4 cups because I love cheese!)
1 (10 oz) package frozen chopped spinach, thawed and well drained
1 (16 oz) container Ricotta Cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon salt
6 ounces of Canadian bacon, chopped
1/2 small onion, diced
vegetable cooking spray
1 (26 oz) jar pasta sauce
Directions:
Cook pasta according to package directions set aside.
Stir together 1 1/2 cups mozzarella cheese (I used 2 cups), ricotta cheese,and next 5 ingredients.
Saute chopped Canadian bacon and diced onion in a skillet coated with cooking spray over medium head 5 to 6 minutes or until onion is tender. Stir into cheese mixture.
Spread 1/2 cup pasta sauce on bottom of an 11x7 (or 9x13) inch baking dish coated with cooking spray.
Layer with 3 noodles ad 1/2 cup pasta sauce; top with half of cheese mixture. Repeat layers once, ending with remaining cheese mixture. Top with remaining 3 noodles and remaining pasta sauce. Sprinkle with remaining 1/2 cup mozzarella cheese (I used 2 cups here).
Bake at 350 for 30 minutes.
Let stand for 5 minutes.
*Can be frozen. If frozen thaw in fridge for 24-36 hours before baking.*
